1 9 inch pastry shell -- unbaked
1 package -- (10 oz) frozen
-- chopped spinach
1 package -- (8 oz) swiss cheese
-- slices
2 tablespoons all-purpose flour
3 eggs -- beaten
1 cup heavy cream
1/2 teaspoon salt
1 dash pepper
Liberally prick bottom and sides of pie shell with fork. Bake at 375 degrees
F for 10 - 12 minutes. Cool on rack. Cook spinach accordingto package direc
tions; drain well. Cut cheese into 1/2" slices; toss with flour; set aside.
Combine eggs, cream, salt, and pepper. Stir in spinach and cheese. Spoon int
o pie shell. Bake at 350 degrees for 1 hour. Yield: 4 to 6 servings.
