Crustless Spinach Quiche

Ingredients:
1 package spinach, frozen chopped -- (10 ounce)
4 medium eggs
1/3 cup chopped onion
1 1/2 cups cottage cheese, lowfat
1 cup mozzarella cheese, shredded -- part-skim
1/3 cup lean ham -- chopped
2 tablespoons Parmesan cheese -- grated
Directions:
Preheat oven to 325 Deg. F. Cook spinach according to package
directions; drain and squeeze on paper toweling to remove all liquid.
Beat eggs; stir in spinach, onion, cottage cheese, mozzarella cheese,
and ham. Pour into ungreased 8- or 9-inch pie pan. Sprinkle Parmesan
cheese over top. Bake for 1 hour. Cut into 6 wedges.
Leftovers can be reheated the next day.
Yield: 6 wedges
