Southwest Quiche

1/2 recipe Basic Pie Crust Dough -- see recipe
2 cups Monterey Jack cheese -- shredded
3/4 cup smoked turkey -- chopped
1/2 cup green chilies -- chopped
112 cups corn
1/4 cup red bell pepper -- chopped
1 1/4 cups red onion -- chopped
1/4 cup minced fresh cilantro
8 eggs
1 teaspoon salt
1/2 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon Tabasco sauce
2 cups evaporated milk

Line a 10-inch pie plate with the pie pastry, trimming and fluting the edge. Ba
ke at 350 degrees for 5 minutes or until partially browned.

Layer half of the cheese, turkey, chiles, corn, bell pepper, onion, remaining c
heese and cilantro in the partially baked crust.

Beat the eggs, salt, garlic powder, cumin and Tabasco sauce in a mixer bowl. Ad
d the evaporated milk, beating well. Pour over the layers.

Bake at 350 degrees for 1 hour or until a knife inserted near the center comes
out clean. Cool for 15 minutes before serving.

If it's Friday or Saturday at The Dove's Nest, that usually means Quiche Day. O
