Spicy Sesame Noodles

6 ounces spaghetti -- or ramen noodles

1/4 cup water
2 tablespoons soy sauce
2 tablespoons tahini
1 tablespoon white or rice wine vinegar
1/4 teaspoon crushed red pepper flakes

1 tablespoon canola oil
1 1/2 cups thickly sliced mushrooms
2/3 cup diced red or green bell pepper
1/2 cup thickly sliced celery -- * I omitted
1/2 cup coarsely chopped onions
2 tablespoons minced ginger root
2 cloves garlic -- crushed
1/4 pound snow peas
1/4 pound shrimp
OR
1/4 pound cooked chicken -- chopped
OR
1/4 pound cooked ham -- chopped
1 tablespoon toasted sesame seeds
Cook the noodles.
In a small bowl, mix the water, soy sauce, tahini, vinegar, and pepper flakes.
Prepare mushrooms, etc.
[Toast the sesame seeds while the stir-frying is going on.]
In a non-stick skillet, heat the oil over medium-high heat.
[If using raw shrimp, stir-fry till they are done; remove and drain.]
Add the mushrooms, bell peppers, celery, onions, and ginger; stir-fry for 3 min
.
Add the garlic and stir-fry for 1min.
Add snow peas and stir-fry for 2-3min.
Add the soy sauce mixture and cook, stirring constantly, until the sauce starts
to
thicken.
Stir in the shrimp/chicken/ham.
In a large bowl, toss the hot pasta with the vegetables/meat sauce and toasted
sesame seeds.
