100 pound Pinto beans
4 cups Jalapeno chiles with juice
1 Bacon -- ground beef, etc)
1 Salt to taste
48 Onions -- large, chopped
40 pounds Meat -- (ham, sausage, pork,
4 cups Chili powder
Soak Beans overnight, then raise to a bOil on high heat. Add all ingredients a
nd simmer until tender (about 6 hours). Add Water as necessary. Stir occasion
ally. Makes 60 gallons. Winner, 1987 World Championship
