2 red peppers, -- seeded
1 red onion
2 tomatoes, -- peeled and seeded
2 cloves garlic, -- chopped
2 cups spicy tomato juice
2 tablespoons olive oil
1 tablespoon red wine vinegar
2 teaspoons lemon juice
2 tablespoons dill, -- chopped
2 tablespoons basil, -- chopped
Salt and pepper
Croutes for garnish
In a food processor or blender, combine peppers, onions, tomatoes, and
garlic. Puree to desired consistency. Add tomato juice, oil, vinegar, lemon
juice, herbs, salt and pepper. Chill and garnish with croutes.
