Mondel Bread (Almond Loaf)
1 c. vegetable oil
2 eggs
3/4 c. sugar
3 oz. orange juice
4 oz. grated almonds
2 tsp. baking powder
3 c. all-purpose flour
4 oz. chocolate chips (more if
desired)
Mix all ingredients together (medium for 4 to 5 minutes or until
mixed through). It will be a thick dough-like consistency. Form 3
logs - sprinkle a light mixture of cinnamon and sugar on top (if
desired). Place logs on greased cookie sheets. Bake for 15 minutes
in a preheated 325 oven. Take out and slice into 1/2 inch pieces.
Put back in oven for another 15 minutes. An option is just baking
for 30 minutes and taking out and slicing when cool. It will be
softer inside. Freezes well.
