Pumpkin Fruit Bread

Amount Measure Ingredient -- Preparation Method

1 15 ounces ca pumpkin -- (apx. 2 cups)
2 cups sugar
2/3 cup softened butter or margarine
1/2 cup water
3 eggs
2 1/2 cups all purpose flour
2 teaspoons soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cloves
2/3 cup chopped dates or raisins
1 cup chopped nuts -- (walnuts)

Preheat oven to 325 degrees. Combine pumpkin, sugar, butter, water and eggs. Be
at 1 min. at medium speed with an electric mixer. Add flour, soda, salt, cinnam
on and cloves. Beat 1 min. at medium speed. Stir in dates or raisins and nuts.
Pour into a greased 8 x 4 inch or 9 x 5 loaf pan. Bake for 50 to 60 minutes unt
il done. Cool in pan 5 minutes. Remove from pan and cool completely.

NOTE: This is an absolutely wonderful recipe. It tastes just as terrific after
being frozen as it does fresh baked.....if not better! :o) I give this to my bo
ss at Christmas time and it has him eating out of my hands for a few days anywa
y!!!!!
