Glazed Orange Muffins
2 C flour
1/2 C sugar (honey)
2 1/2 tsp baking powder
1/4 tsp salt
1 lg or 2 sm oranges
1/4 to 1/3 C milk as needed
1/3 C butter, melted (oil)
1 lg egg, lightly beaten (1/4 C milk)
1 tsp vanilla
1/4 tsp baking soda
1/2 C chopped pecans, lightly toasted (I didn't add nuts)
Orange glaze (I didn't add the glaze, they were sweet enough without it):
zest of 1 orange
1/3 C orange juice
1/3 C sugar
Preheat over to 400F. Grease muffin tin (makes 12 muffins). Combine
flour, sugar, baking powder, and salt. Grate the zest of the orange and
juice it. Add enough milk to the orange juice to equal 1/2 C plus 2 T and
pour it into another bowl. Add the butter (or oil), egg (or milk),
vanilla, and baking soda (and honey, if using it) and whisk until blended.
Add wet ingredients to the dry and combine with only a few strokes. Fold
in orange zest and pecans. Spoon batter into tins. Bake until golden,
about 15 - 20 mins.
Prepare the glaze: In a small pan, bring the zest, juice and sugar to a
boil, stirring to dissolve the sugar. Turn down heat and simmer until
slightly thickened, about 4 - 5 mins. Let muffins cool 2 - 3 mins, brush
the tops with the glaze, or drip over top with spoon.
