Lemon Poppy Seed Muffins
3 cups flour
1 1/2 teasp. baking soda
1 1/2 teasp. baking powder
1/2 teasp. salt
3/4 cup butter, softened
1 cup plus 2 Tbls. sugar
3 eggs
1 cup sour cream
1/3 cup freshly squeezed lemon juice
1 1/2 teasp. vanilla
1/4 cup poppy seeds
1 teasp.grated lemon peel
Granulated sugar for garnish
Preheat oven to 375 degrees.
Sift together flour, baking soda, baking powder and salt.
Set aside.
In large mixer bowl, cream butter and sugar until fluffy.
Add eggs, one at a time, beating well after each addition.
Add flour mixture alternately with sour cream, lemon juice and vanilla;
Beat at low speed until blended.
Fold in poppy seeds and lemon peel.
Fill muffin cups with paper baking liners 2/3 full.
Sprinkle tops with additional sugar.
Bake at 375 degrees for 18-20 minutes
