2 tablespoons sucanat
3 teaspoons salt
2 packages active dry yeast
3 cups whole wheat flour
3 cups whole wheat pastry flour -- to 3 1/2
2 cups warm water -- about 125 degrees
1/3 cup soy margarine
1/3 cup molasses & honey combined
2 pounds pitted dates
1 1/2 cups water -- to 2
1 cup chopped walnuts or pecans
*Maple Topping*
1/2 cup water
1/2 cup pure maple syrup
1/8 teaspoon salt
2 tablespoons cornstarch
1 teaspoon vanilla
1 teaspoon maple flavoring
1 teaspoon butter flavoring
Combine first 3 ingredients with 1 cup whole wheat flour and 1 cup whole
wheat pastry flour, set aside. In saucepan slowly heat water, margarine and
molasses/honey until margarine melts. Add liquid to dry ingredients and mix.
Add remaining flour and knead until firm but slightly sticky. Place in oiled
bowl, cover and let rise in warm, draft free place one hour.
Meanwhile, cut pitted dates into small pieces, add water, place in saucepan
and simmer until it becomes a soft, thick date butter. Cool.
When bread dough has risen, divide into 2 parts. Roll each into 1/4 inch
rectangle and spread with date butter. Sprinkle with nuts. Roll up then
slice into 1 inch thick rolls. Place on oiled baking sheets, flatten and
shape. Place sheets in warm, draft free place for 45 minutes. Bake at 400
degrees for 15 to 20 minutes until lightly golden. (optional: when cool
drizzle with maple topping) Enjoy.
MAPLE TOPPING: Mix ingredients in saucepan and heat just to a boil. Cool,
drizzle on rolls then sprinkle with nuts or coconut.
