2 1/4 cups water
1 tablespoon extra-virgin olive oil
1/2 teaspoon salt
1 box couscous -- (10 oz.)
1 cup tomatoes -- seeded/diced
1/4 cup chopped fresh fennel fronds or parsley
2 tablespoons chopped fresh dill
Combine water, oil and salt in medium saucepan; bring to boil. Stir in
couscous; remove from heat, cover and let stand 5 minutes. Transfer to
large bowl; fluff with fork. Toss in tomato, fennel and dill.
Makes 6 servings.
Here's a great side dish that takes no time to put together. Serve with
a rotisserie chicken.
