Classic Potato Vinaigrette Salad

2 pounds small red potatos -- scrubbed
2 tablespoons red wine vinegar
1 tablespoon dijon mustard
1 teaspoon salt
1/2 teaspoon freshly ground pepper
2 tablespoons olive oil
1/4 cup minced shallots -- or red onion
1 cup finely chopped celery
1/4 cup chopped fresh parsley
1. Boil potatoes in salted water, just until tender, 15 to 20 minutes. Drain.
Cool slightly; dice.
2. Whisk vinegar, mustard, salt and pepper in large bowl. Whisk in oil. Add
shallots and warm potatoes; toss. Cool.
3. Stir in celery and parsley. Makes 6 cups.
The potatoes should be warm when tossed with the vinaigrette so they will fully
absorb its flavors.
