CREAMY SWEET POTATO SALAD

2 cups Mayonnaise
1/3 cup Buttermilk
2 tablespoons Lemon juice
1 tablespoon Dijon mustard
1 teaspoon Sugar
3 pounds Sweet potatoes; cooked -- peeled and cubed
1 cup Peas
1/2 cup Sweet red pepper -- OR green
1/2 cup Green onions -- sliced
1 bn Fresh spinach
3 Bacon strips -- cooked and
1. In a bowl, blend mayonnaise, buttermilk, lemon juice, mustard and sugar
until smooth.
2. In a large bowl, combine sweet potatoes, peas, pepper and onions.
3. Pour dressing over all and toss to blend.
4. Chill at least two hours or overnight.
TO SERVE: Spoon salad into a large brown lined with spice and and top with
bacon.
NOTE: The colors must make this a very pretty dish. I can't wait to try it.
