***DRESSING***
3 tablespoons olive oil
2 tablespoons fresh lime juice
1/4 tablespoon grated orange peel
1 tablespoon fresh orange juice
1 tablespoon chopped fresh cilantro
1 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon grated fresh ginger

1 jicama -- cut into thin
-- strips
1 yellow pepper -- cut into thin
-- strips
2 ripe avacados -- cut into 1/2-inch
-- dice
1 bunch fresh watercress
1. Make dressing: Combine all ingredients in small bowl.
2. Combine jicama and pepper in bowl; toss with 3 tablespoons dressing. (Can
be made ahead. Cover and refrigerate both dressing and salad up to 4 hours.)
3. Just before serving, toss avocado with remaining dressing in bowl. Arrange
watercress around edge of large platter; spoon on jicama mixture. Top with av
ocado. Makes 8 servings.

mild-flavored
