Ingredients:
2 cups black-eyed peas -- , cooked
1/2 cup tomatoes -- diced
1/2 cup red onion -- diced
1/2 cup carrots -- grated
1 teaspoon olive oil
1 tablespoon balsamic vinegar
1 teaspoon freshly ground black pepper
1/2 teaspoon ground cumin
Preparation Instructions:
In a large bowl, stir together carefully so as not to crush anything,
the
peas, tomatoes, onion and carrots. In a cup, combine olive oil, vinegar,
pepper and cumin. Pour over vegetables. Chill salad in refrigerator for
at
least 2 hours for the flavors to blend.
Serves 4
