8 oranges
2 grapefruits
1 lemon
1 lime
5 sprigs mint -- finely chopped

Zest the citrus fruit and finely chop. Section the oranges, grapefruits, lime a
nd lemon, and mix with Queso Fresco and the chopped zest. Add the mint leaves a
nd let stand at room temperature for about 30-40 minutes before serving.
