Kopaa Sesame Salad

1 Head lettuce
2 cucumbers -- pared and thinly
sliced
1 Bunch watercress (stems removed)
16 Oz. Mandarin oranges -- drained
Sesame Seed Dressing:
1/2 C. salad oil
4 Tbsp. vinegar
2 Tbsp. sugar
2 Tbsp. juice from Mandarin oranges
2 Tsp. soy sauce
2 Tsp. toasted sesame seed
Break washed and dried lettuce and watercress into
bite-size pieces in a large salad bowl. Reserve some whole
watercress leaves for garnish. Arrange cucumber slices in a
circle in center of bowl. Fill center with Mandarin oranges.
Garnish with watercress. Just before serving, drizzle sesame
seed dressing over salad and toss lightly.
Sesame Seed Dressing:
Combine salad oil with vinegar, sugar, juice from
oranges, soy sauce and sesame seed in a jar. Cover and shake
to mix.
Other fruits (peaches, pineapple chunks, pears, etc.)
can be substituted for the Mandarin oranges. Cucumbers look
pretty when left unpeeled, scored deeply from top to bottom
with the tines of a fork, and then sliced thin.
Serve with Island Fruits with Creme De Menthe Sauce and
Chicken Hawaii Kai. Both recipes are in this cookbook.
