SMOKED TURKEY SALAD

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 pounds Smoked turkey -- skinned and
into 2-inch julienne
1 1/2 cups Sherry Mayonnaise -- salt & freshly groun
pepper
3/4 pound Jarlsberg cheese -- julienne
2 cups Grapes, seedless -- red or grn
1 cup Celery -- chopped
to taste
1 tablespoon Green peppercorns -- water-
drained

1. Combine turkey, Jarlsberg, grapes and celery in a mixing bowl.
2. Add the Sherry Mayonnaise and toss gently but well. Season to taste
with salt and pepper and toss again. Cover and refrigerate until serving
time.
3. Arrange the salad in serving portions and sprinkle with green
peppercorns to taste.
Cooked, lightly smoked ham or chicken may be substituted for turkey.
