Stuffed Zucchini

1 Giant Zucchini
1 Lb Italian Sausage
2 Large Onions -- Chopped
2 Cloves Garlic -- Finely Chopped
Fresh Bread Crumbs
Tomato Paste
herbs of choice
Cheese Of Choice

The amounts are not specified since you go by "feel."

Put holes in the zucchini with a fork and microwave until soft. No
microwave - par-boil the zucchini in a pot of water until soft. Cool the
zucchini and half it lengthwise. With a spoon take out the seeds.
Remove the pulp from the zucchini, leaving some flesh near the skin to
make zucchini "boats." Chop the zucchini flesh.

Brown the Italian sausage in a large skillet. Drain off most of the
grease. Add onions and garlic and cook until translucent. Add chopped
zucchini, herbs of choice (I use basil & Italian mix) and enough bread
crumbs and tomato paste for a texture similar to turkey dressing.
Sprinkle with cheese (I don't care for Parmesan so usually use Asiago or
Romano). Bake at 350 degrees for about 1 hour. The top should be golden
brown.
