Mixed Greens with Corn Bread Dumplings

2 lbs turnip greens
2 lbs mustard greens
2 1/2 quarts water
1 onion quartered
1 lb salt pork -- cubed
salt and pepper to taste
2 teaspoons sugar
1 1/2 cups white corn meal
1/4 cup flour
1 cup boiling water
Discard any rough stems from the greens. rinse in cold water WELL.
Bring the 2 1/2 quarts water to a boil in large kettle, add onion and
salt pork. Simmer 30 minutes and add the greens, salt and pepper to
taste. Add 1 teaspoon of sugar and simmer about 2 hours.SIMMER-slowly
(I said ) Combine corn meal, flour, 1 teaspoon salt and remaining
sugar in mixing bowl. Slowly add the boiling water, stirring. Add
just enough water to make a stiff, manageable mixture. Wet the palms
of your hands, break off bits of corn meal dough the size of walnuts
and shape into balls. Drop balls in the boiling greens. Cover and
continue cooking 30 minutes.

NOTES : Holy Hallelujah!! Sweet Dixie how I love your Southern
cooking! I have sat and eaten this and had sweat pouring down my face.
We often add pepper vinegar, hot sauce, malt vinegar, chopped green
onions, crumbled crisp bacon and chopped green chilies, hot peppers
and so on. I truly love this recipe. My Mother made this so often. It
takes me home again.
