Roasted Garlic ( How to )

1 whole garlic
1 Tablespoon olive oil
foil
salt
pepper
Preheat oven to 275 degrees F.
Remove the papery outer layers from 1 whole head of garlic. Cut of
the top of the garlic head. Drizzle olive oil over the head of garlic,
salt and pepper to taste. Wrap in foil and bake for 2 hours.
Sprinkle with grated cheese and fresh herbs ( optional ) , after the first
hour of baking.
To serve: Squeeze garlic paste from the garlic clove onto crackers or
sliced bread and spread. The garlic can be add to most recipes
that call for garlic. The roasted garlic is very mild compared to raw
garlic.

NOTES : I use the roasted garlic in a wonderful chinese recipe that I
duplicated from a great restaurant near our home.
