Chicken Salad Dressing

CHICKEN SALAD DRESSING

1/2 cup reserved chicken broth
1/2 cup white vinegar
1/2 cup sugar
4 egg yolks -- beaten
1 tablespoon Dijon mustard
salt -- to taste
black pepper -- freshly ground, to
-- taste
1/2 cup whole milk
4 tablespoons butter
Combine all the ingredients, except for the butter, into a saucepan. Whisk
well and cook over a medium heat, stirring constantly until the mixture
thickens. Remove from the heat and whisk in the butter. Let the sauce cool
to room temperature, or refrigerate until ready to use.
Makes 2 cups
