Hot Bacon Dressing

3/4 pound Bacon -- diced
1/2 cup onion -- chopped
1 cup cider vinegar
2 cups water
1 1/2 cups sugar
1 jar pimientos (2 ounces) diced -- drained
2 tablespoons Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons cornstarch
2 tablespoons cold water
In a large skillet, cook bacon until crisp; remove bacon and set aside.
Drain, reserving 2 tablespoons drippings in the skillet. Add onion and
saute until tender; remove from heat. Add vinegar, water, sugar,
pimientos, mustard, salt and bacon; mix well. Combine cornstarch and cold
water; stir into skillet. Boil for 2 minutes, stirring constantly.
