3 1/3 cups prepared fruit
(about 3 lbs. fully ripe peaches)
2 tablespoons lemon juice -- (about 1 lemon)
3 cups sugar
1 box SURE.JELL for Lower Sugar Recipes
-- Fruit Pectin

RINSE clean plastic containers and lids with boiling water. PEEL, pit and
finely chop or grind peaches. Measure 3 1/3 cups into large bowl or pan. Add
lemon juice. MEASURE sugar into separate bowl. (Scrape extra sugar off cup
to level for exact measure.) MIX 1/4 cup sugar from measured amount and pectin
in small bowl. Gradually add pectin mixture to fruit, stirring vigorously.
Let stand 30 minutes; stir occasionally. Gradually stir remaining sugar into
fruit mixture. Stir until sugar dissolves. FILL all containers to within 1/2
-inch of tops. Wipe off top edges of containers; quickly cover with lids.
Let stand at room temperature 24 hours. Jam is now ready to use. Store in
refrigerator up to 3 weeks or freeze extra containers up to 1 year. Thaw in
refrigerator. Makes about 5 (1-cup containers).
