Bill's Basic Bread Pudding

Title: Bill's Basic Bread Pudding

3 ea Slices stale bread
1 c Sugar
1/4 ts Nutmeg
1/4 ts Salt
2 1/2 c Milk
2 tb Butter
3 Eggs
1 ts Vanilla
It is best to use a Hearty Bread for this recipe. Breads such as "Wonder
Bread" do not work as well.
Cut bread into cubes, or roughly tear apart into chunks. Put Bread into
bowl. In a blender, or by hand, mix Eggs, Milk, Sugar, Salt, Vanilla and
Nutmeg. Pour over bread cubes and let soak at least one hour, or covered
overnight in the refrigerator
Pour all into a 3 quart liberally buttered oven proof casserole dish. (If
any butter is left after buttering the casserole, place it in the bottom of
the casserole before pouring in remaining ingredients. Place casserole in
a pan of very hot water to come about 2/3 way up the casserole dish. Bake
in a pre-heated oven at 325 degrees until done, about 30-40 minutes.
Pudding will raise like a Souffle, then collapse when removed from the
oven. Serve warm or cold with or without your favorite "sauce" or Whipped
Cream.
NOTE:
There should be enough bread to fill the casserole dish 2/3 full. The
Milk/Egg mixture should come to about 1 inch above the bread mixture in the
dish.
This recipe is basically a loose custard with bread in it. Some recipes
call for much more bread with the resulting pudding having the consistency
of Meatloaf which can then be "sliced".
This is a very Basic recipe. In my database there are currently over 175
recipes alone for Pudding containing Bread.
Here are some alternate suggestions I have tried:
1 - Butter the slices of Bread before breaking into pieces.
2 - Cover the slices of Bread with Three Fruit Marmalade before breaking
into pieces.
3 - Add the Zest of one Lemon, diced very finely
4 - Soak Raisins in Grand Marnier and add to Bread and mix before covering
with Milk/Egg mixture.
5 - Sprinkle 1/2 teaspoon Cinnamon over bread and mix before covering with
Milk/Egg mixture.
6 - Use Cinnamon Raisin Bread
7 - Substitue Half & Half for Milk
8 - Do all of the above.
