Chocolate Bread Pudding With Sun-Dried Cherries And Creme

1/2 Cup sun dried cherries
1/3 Cup cognac
1/2 loaf French baguette
8 Ounces bittersweet chocolate
3 eggs
1 Cup Cream
1/2 Cup Sour Cream
1/2 Cup sugar
1/4 Teaspoon cinnamon
1 Teaspoon vanilla extract
1 Cup creme fraiche
1 Tablespoon powdered sugar

1. Soak the cherries in cognac for 1 hour.
2. Preheat the oven to 350 degreesF. Remove the crust from the baguette and
cut center of the bread into small cubes. Place cubed bread on a baking sheet
and toast lightly in the oven.
3. In a medium-size mixing bowl, melt the chocolate in a double boiler. In
another mixing bowl, mix the eggs, cream, sour cream, sugar, cinnamon and
vanilla extract. Pour this egg mixture into the melted chocolate and mix well
to incorporate thoroughly. Add the soaked cherries, cognac, and the toasted
cubed bread. Set the bowl aside for about two hours in order to let the bread
absorb the mixture well.
4. Preheat the oven to 325 degreesF. Pour the mixture into six 8- to
10-ounce ramekins. Place the ramekins in a baking pan and add enough hot
water to come halfway up the sides. Cover the pan loosely with foil and bake
until the pudding is just set, about 35 minutes. The pudding should still be
soft in the center when lightly shaken. Remove from the oven.
5. In a small bowl, whip the creme fraiche and powdered sugar together.
Scoop the sweetened creme fraiche onto the pudding and serve hot.
