Creamy Vanilla Pudding (M-A-M)

2 egg yolks
2/3 cup VANILLA PUDDING AND PIE MIX
2 3/4 Cups milk
2 T. butter or margarine
1 1/2 teaspoons vanilla extract
In a medium bowl, beat eg yolks; set aside.
In a medium saucepan, combinee VANILLA PUDDING AND PIE MIX and milk. Cook and
stir over medium heat until mixture thickens and begins to bubble. Stirring
vigorously, pour about 1/2 of the hot mioxture into beaten egg yolks. Stir
egg yolk mixture into remaining hot mixture. Cook and stir 1 minutes longer.
Remove from heat. Stir in butter or margerine and vanilla until blended.
Pour cooked pudding into 6 dessert or custard cups. Cover each with plastic
wrap.
Refrigerate 1 hour.
