Chocolate Sauce

CHOCOLATE SAUCE

2 ounces semisweet baking chocolate -- * see note
2 tablespoons butter
1/2 cup boiling water
1 1/2 cups sugar
1/8 teaspoon salt
1 teaspoon vanilla extract or some other flavoring
Melt chocolate in top of a double boiler. Stir in butter. Add boiling water
and mix. Add sugar and salt. Cook, stirring only occasionally, for about 15
minutes. Remove from heat and stir in vanilla extract. Serve immediately or
cool and store in a covered container in your refrigerator. Sauce will keep
up to 3 minths and is best if reheated slightly.
YIELD: about 1 cup of sauce
Some flavor variations to use instead of vanilla extract:
1 tsp mint extract
2 Tbsp chopped nuts
1 tsp almond extract
1 tsp instant coffee granules
1 tsp orange extract
1 tsp maraschino cherry syrup and 2 Tbsp chopped cherries
1 Tbsp apricot preserves

NOTES : If you do not have baking chocolate on hand you can substitute 3
Tbsp cocoa powder, 2 tsp shortening and 3 Tbsp sugar or each ounce of baking
chocolate called for in any recipe.
