Apple Cake

Title: Apple Cake

4 c Apples;peeled and grated
1 1/2 c Sugar; up to 2 cups
2 c Flour
1 1/2 ts Baking soda
1 ts Salt
2 ts Cinnamon
1/4 ts Powdered cloves
1/2 ts Nutmeg
1/2 ts Ginger
2 ts Vanilla
2 Eggs;beaten well
3/4 c Vegetable oil
1/2 c Walnuts;coarsely chopped

Mix grated apples with sugar and allow to sit for 1/2
hour. Mix all dry ingredients together. Set aside.
After apple and sugar mixture has sat for 1/2 hour,
add eggs, oil and vanilla. Mix well. Add dry
ingredients and then walnuts. Pour mixture into a
greased (I use non-stick spray) 13" x 9" pan, and bake
for 50 at 350 degrees.
