Banana Cake To Take

1 pk Yellow cake mix; with puddin
1 c Mashed ripe bananas
3/4 c Buttermilk; *see note
1/4 c Orange juice
1/2 ts Orange peel; grated
2 Eggs
***topping***
1/4 c Butter or margarine
3/4 c Brown sugar
1/2 c Pecans; chopped
2 tb Orange juice; -or-

Recipe by: Sue Klapper Preparation Time: 0:40 Heat oven to 350. Grease and
flour 9 x 13 pan. In large bowl, combine all cake ingredients at low speed
until moistened; beat 2 minutes at high speed. Pour batter into greased and
floured pan. Bake at 350 for 35 to 40 minutes or until toothpick inserted
in center comes out clean. Meanwhile, melt margarine in small saucepan;
stir in remaining topping ingredients. Spread over hot cake; broil 2 to 3
minutes or until topping is golden brown. Cool completely.
Tip: To substitute for buttermilk, use 2 t. vinegar or lemon juice plus
milk to make 3/4 cup.
