Fresh Apple Cake w/Sauce

Title: Fresh Apple Cake w/Sauce

Yield: 8 servings
3 c Apples, peeled and chopped
2 c Sugar
1 c Butter or oil
3 Eggs
2 c Self-rising flour
1 ts Cinnamon
1/2 ts Nutmeg
1 c Nuts (optional)
1 c Raisins (optional)
1 ts Vanilla
Heat oven to 350 degrees. Grease "2" 8 or 9 inch cake pans. Or
Grease 1 large pan... Place chopped apples in a bowl; add sugar and
mix, let stand 10 minutes. Add melted butter and eggs, beat with a
wooden spoon. Sift dry ingredients together and add to cake mixture.
Stir in nuts, raisins, and vanilla. Pour into prepared pans. Bake
for 55 minutes. Serve with sauce.
Sauce: 1 cup sugar 1/4 cup butter
1/2 cup evaporated milk 1 tsp. vanilla
Bring first 3 ingredients to boil, stirring constantly. Remove from
heat. Add vanilla. This sauce is good warm or cold spooned over the
cake.

Hi! I have a favorite apple cake recipe...It is taken from the "The
Nashville Cookbook" published in 1977...The recipe was from Eva
Redmon and was distributed at a homecoming in East Tennessee.... I
usually double the recipe, and make extra, because the cake
disappears like magic in a day!!! (with or without company!) I
usually make it without raisins or nuts.
