Grandma's Best Cake
2 cups sifted all-purpose flour
2 tsp. soda
2 tsp cinnamon
1/2 tsp salt
3 eggs (beaten)
3/4 cup oil
3/4 cup buttermilk
2 cups sugar
2 tsp vanilla
1 cup crushed pineapple (well drained)
2 cups grated carrots
3 1/2 oz. coconut
1 cup chopped walnuts
Sift together dry ingredients (flour, soda, cinnamon & salt). Cream
well beaten eggs, oil, buttermilk and sugar. Mix in vanilla and add
to dry ingredients. Fold in pineapple, carrots, coconut and nuts.
Pour ingrediends into a well greased and floured 13x9x2 1/2 pan and
bake at 350 degrees for 55 minutes.
About 10 minutes before cake is removed from oven make the <a
