Great Grandma Mike's Pork (Fruit) Cake

1 LB salt pork -- ground & rinsed
1 cup lard
12 ounces molasses -- Light
1 pound brown sugar -- light
2 1/2 cups water -- hot
2 teaspoons baking soda -- heaping
2 teaspoons baking powder
9 cups flour, all-purpose -- approx
1 teaspoon allspice
3 teaspoons cinnamon
2 teaspoons nutmeg
1/2 teaspoon cloves
2 teaspoons vanilla
2 pounds candied fruit -- mixed
3 slices glazed pineapple
4 ounces lemon peel
4 ounces orange peel
4 ounces citron peel
1 pound raisins -- golden
1 pound raisins, seedless
1 pound currants
2 pounds candied cherries -- cut in half
4 ounces dates -- cut up
6 each figs -- cut up
20 each maraschino cherries -- cut in half
1 1/2 pounds walnuts -- coarsley cut
1 pound pecans -- coarsley cut
Makes 4 large loaves or 8 small loaves
Step One..
Cream together well:
1 lb of fat salt pork ground and rinsed
1 cup lard
12 oz bottle of light molassis
1 lb of light brown sugar
Mix:
2 1/2 cups of hot water
2 heaping tsp baking soda
mix with above and cool
Step Two:
2 tsp of baking powder
9 cups of all purpose flour (about)
1 tsp all spice
3 tsp cinnamon
2 tsp nutmeg
1/2 tsp cloves
2 tsp vanilla
Sift 9 cups of flour, and add the above ingredience and fold into the salt
pork mixture after it is cooled.
Step Three:
Slice Candied Fruit into cubes:
2 lbs of mixed candied fruit & peal
3 slices of glazed pineapple
4 oz lemon peel
4 oz orange peel
4 oz citron peel
1 lb golden rasins
1 lb seedless rasins (reg rasins)
1 lb currents
Soak rasins and currents in hot water then drain well, and squeeze out
water in a towel.
Add:
1/2 lb of glazed cherries cut in half
4oz pk of dates cut up
6 figs cut up
20 maraschino cherries cut in half
1 1/2 lbs of walnuts cut corsely
1 lb pecans cut coarsley
Use 8 small loaf tins bake 325 for about 1 1/2 hours, or 4 large loaves at
325 for about 3 hours. Place a small pan of water on the bottom rack of
the oven while baking. Press aluminum foil into the bread tins and grease
the foil well.
