David's Cowboy Cookies

1 1/2 cups unsalted butter, softened
1 cup granulated sugar
1 cup firmly packed dark brown sugar
3 large eggs
2 teaspoons vanilla
2 3/4 cups all purpose flour
3/4 teaspoon baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3 cups old-fashioned rolled oats
2 cups semisweet chocolate chips
Preheat oven to 375 degrees.
In a large bowl with an electric mixer, cream butter and sugars until light
and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in
vanilla.
Into the bowl sift together flour, baking soda, baking powder, and salt. Beat
(by hand) until the batter is combined well. Stir in rolled oats and chocolate
chips.
Drop batter by rounded tablespoons onto lightly buttered baking sheets.
Bake in middle of oven until golden, about 10. Remove from cookie sheet and
cool. Makes about 64 cookies.
Note: I just had a couple of these out of the cookie jar. I
swear they're better the next day than they are fresh from the
oven. I'll bet these would be a good cookie to pack and mail.
Drat...she'll make more of these this weekend to send to her
boyfriend at college, and then I'll have to sample more...
