6 granny Smith apple -- peel, core, 3/4"
12 ounces cranberries
1/2 cup sugar
1 lemon -- juiced
BATTER
1 stick butter -- softened
3/4 cup sugar
1 1/4 cups cake flour
2 teaspoons baking soda
1 teaspoon salt
1 egg -- beaten
1/2 cup buttermilk
1 teaspoon lemon zest
Toss together fruit, sugar & lemon juice. Place in a 2 quart ovenproof
glass dish.
Beat together butter & sugar. Mix together flour, soda & salt. Mix egg
into butter & sugar. Aff half of the flour mixture; mix in half of the
buttermilk. Add the remaining flour mixture, mix in remaining buttermilk &
the lemon zest.
Spread batter on fruit & bake for 45 minutes at 350.
