French Apple Slices

2 cups flour
2 egg yolks
1/2 teaspoon salt
1 tablespoon lemon juice
3/4 cup shortening
7 tablespoons cold water
*** FILLING***
8 apples or more
1 cup sugar
1/4 teaspoon salt
1 tablespoon flour
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup raisins or currants- optional -- ( we never do this)
***FROSTING***
3/4 cup confectioners sugar
1/4 teaspoon vanilla
1 tablespoon warm water
Cut shortening into flour and salt until like coarse meal. In seperate bowl, be
at eggs slightly, add water and lemon juice: blend well. Add this to flour and
shortening mix. Stir only until soft dough is formed. Roll 1/2 of dough about 1
/8 inch thick. Place in 7x12 or 13x9 pan. Arrange apples on crust. Roll a top c
rust. Cut several slits and place on top of apples. Seal edges and bake 350* ab
out 1 hour. Peel and slice apples thin. Combine sugar, salt, flour, spices and
blend. Add to apples and toss until a
pples are coated. Put into above crust. We always bake, cool, and freeze. Befor
e serving , add frosting.
Mix frosting ingredients and drizzle over cool top.
This is so good. A slice with ice cream is heavenly. We fianlly have this down
to an assembly to make it becasue it is so popular. NOTE: My MIL used to have a
n apple tree and made these every fall . We would still be eating them in the s
pring at Easter, so I know this recipe freezes a long time. She always got rave
reviews for this one.
