Lemon Curd

1/4 pound butter
1/2 cup sugar
4 tablespoons fresh lemon juice
1 Zest of lemon
3 eggs
Place butter, sugar, juice and zest in 4 cup measure. Cover with plastic
wrap. Micro hi 4 minutes. Remove from oven, stir well. Whisk 1/4 cup
mixture into eggs to warm them. Whisking constantly, pour egg mixture
back into remaining lemon mixture. Cook uncovered on Hi for 2 minutes.
Whisk til smooth. Micro 2 minures longer. Remove and immediately pour
into food processor and process for 30 seconds. Cool before serving.
Makes 1 cup.

or cake filling, or in tart shells.
