Strawberry Sabayon

Amount Measure Ingredient -- Preparation Method

250 g strawberries -- hulled and sliced
or chopped, if large
4 large egg yolks
4 tbsp caster sugar
8 tbsp sweet sherry or cider
large pinch ground cinnamon
extra ground cinnamon, strawberries
and strawberry or mint leaves -- to decorate

1. Divide the strawberries between 4 heatproof glass dishes and stand on
saucers.

2. Place the egg yolks, sugar, sherry or cider and cinnamon in a large
heatproof bowl.

3. Just before serving, half fill a pan with water and bring to the boil,
then reduce the heat. Place the bowl over the water, making sure it doesn’t
touch the water, and whisk the egg yolk mixture for 4-5 minutes with an
electric whisk until very thick and foamy. Quickly pour over the
strawberries.

4. Decorate with a little ground cinnamon, strawberries and mint leaves.
Serve warm with amaretti biscuits, if liked.

NOTES : Wonderfully light, this dessert is best finished at the very last
moment so that the sauce is still warm when you serve it.
