2 1/3 cups bisquick® baking mix
3 Tablespoons sugar
3 Tablespoons margarine or butter -- melted
1/2 cup milk
3/4 cup whipping cream
2 Tablespoons sugar
Prepare one of the fillings below.
Heat oven to 425. Mix baking mix, 3 tablespoons sugar, the margarine and
milk until soft dough forms. Drop dough into 6 mouns onto ungreased cookie
sheet.
Bake 11-12 minutes or until golden brown. Beat whipping cream and 2
tablespoons sugar in chilled medium bowl on high speed until stiff. Split
warm shortcakes; fill and top with filling. Top with whipped cream.
6 servings.
Strawberry Filling:
4 cups sliced strawberries
2/3 cup sugar
Mix all ingredients, let stand 1 hour.
Three-Berry Filling
2 cups sliced strawberries
1 cup fresh raspberries or 1 package (10 oz.) frozen raspberries, thawed and
drained
1 cup fresh or frozen (thawed) blueberries
1/4 cup sugar
Mix all ingredients; let stand 1 hour.
Strawberry Peach Filling
2 cups sliced strawberries
2 peaches, peeled and sliced, or 2 cups unsweetened sliced peaches, thawed
1/3 cup sugar
Mix all ingredients; let stand 1 hour.
