1 1/2 c raspberries, strawberries, or blueberries -- fresh or f
rozen
1/4 c sugar
2 tbsp cornstarch
1/4 c water
1 tbsp lemon juice
1 8-oz pkg plain yogurt
3 peaches, coarsely chopped -- (2 c)
In small saucepan, stir berries and sugar. Stir cornstarch and water until smo
oth. Add to fruit mixture. Cook over med heat, stirring constantly, until mixt
ure comes to boil; boil 1 min. Stir in lemon juice. Cool. Fold yogurt into c
ooled fruit . In parfait glasses, alternately layer berry mixture with peaches.
Freeze. Remove from freezer 1/2 hr before serving.

NOTES : "Low-calorie light dessert. Peaches and berries, thickened with cornst
