Cheddar Cheese Spread

1 pound Sharp cheddar cheese
1 pound Mild cheddar cheese
2 cloves garlic -- crushed
2 tablespoons Worcestershire sauce
1 teaspoon salt
1 teaspoon dry mustard
1/8 teaspoon hot pepper sauce
1 cup beer
Cut cheese into 1/4 inch slices and put in large bowl. Let stand room
temperature about 4 to 6 hours or very soft. Beat until light colored and
smooth. Add garlic, Worcestershire sauce, salt, dry mustard and hot sauce.
Add beer 1/4 cup at a time blending well after each addition until light and
fluffy.
Store in tightly covered jar in refrigerator
Serve as a spread on crackers, A good topping for hot vegetables, baked
potatoes on on hot homemade breads.
Will keep several months
Makes 1 1/2 quart of spread
