19 ounce can black beans -- drained/rinsed
1/2 cup prepared mild salsa
1 cup chopped tomato
1 cup shredded reduced-fat Cheddar cheese
4 low-fat flour tortillas -- (7-inch)
2 cups chopped romaine or iceberg lettuce
Combine beans and salsa in microwaveproof bowl. Microwave on High 2
minutes. Stir in tomato and cheese.
Wrap tortillas in damp paper towels. Microwave on High 1 minute until
softened and heated through.
Spoon one quarter of black bean mixture onto each warm tortilla.
Sprinkle each with 1/2 cup lettuce. Roll up. Serve immediately.
Makes 4 servings.
