Homemade Lemon Pie Filling Mix

2 1/2 cups lemonade powder -- presweetened
1 cup cornstarch -- PLUS
2 tablespoons cornstarch
1 1/4 cups sugar -- or more to taste
1 teaspoon salt

In a medium bowl, combine lemonade powder, cornstarch, sugar and salt. Mix
well. Put in a 1-qt airtight container. Label with date and contents. S
tore in a cool, dry place. Use within 4-6 months.

Makes about 4 1/4 cups of Homemade Lemon Pie Filling.
