Emilie's Pork Medalions Chinese Style

Title: Emilie's Pork Medalions Chinese Style

Yield: 4 Servings
6 Pork medallions trimmed of
All fat
1 t Dry mustard
1 T Sugar
2 T Honey or applesauce
2 T Oil
3/4 c Soy sauce
1/4 c Dry sherry, or madera
1 T Grated fresh gingeroot
1 lg Clove garlic crushed
Blend all ingredients but pork and bring to slow boil . Let simmer to
blend flavors for about 1/2 hour stirring to prevent sticking.
Saute pork medallions in 1 t oil or in pan coated with pan spray. When
pork is cooked serve with sauce. Garnish with parsley.
