enchilada sauce

monterey jack cheese

use cooked chicken or ground beef . In a pan, cook together, equal amts of oil
and flour (usually 4 T each) with one chopped onion. When brown, ad 2 cups chic
ken broth, keep adding broth until a smooth consitancy. Add half a can enchilad
a sauce and stir, taste, add salt to taste. put about a dozen tortiallas in a d
ish towel and place in the microwave for 2 min. take one tortilla and place it
in a greased cassarole pan. ad a little meat and roll, place down in the cookie
sheet continue this untill the pan i
s full. Cover the enchukada's with the "gravy" cover with grated montery jack c
heese and bake for 30 min at 350 deg.
