Beef Fajitas

1 1/2 pounds beef flank steak
1 cup chopped onion
1 green sweet pepper -- cut in 1/2" pieces
1 jalapeno pepper -- chopped
1 tablespoon cilantro
2 cloves garlic -- minced
or
1/4 teaspoon garlic powder
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon salt
1 8 oz can chopped tomatoes
12 8-inch flour tortillas

shredded Cheddar cheese

Cut flank steak into 6 portions. In any size Crock-Pot combine meat, onion, gr
een sweet pepper, jalapeno pepper, cilantr, garlic, chili powder, cumin, corian
der, and salt. Add tomatoes. Cover and cook on LOW for 8 to 10 hours or on HI
GH 4 to 5 hours.
Remover meat from Crock-Pot and shred. Return meat to Crock-Pot and stir. To
serve fajitas, spread meat mixture into flour tortillas and top with above ment
ioned toppings if desired. Roll up tortillas.
Tip: If using fresh jalapenos, be very careful in handling. Wear rubber glove
s if possible as chili peppers contain a volatile oil that will burn if left in
direct contact with the skin. Wash hands immediately after handling.
