2 Lb. beef for stew
2 Tbsp. oil
1/2 Tsp. salt
1/2 Tsp. ginger
1 Medium onion -- chopped
1 1/2 C. water (cold)
3 Tbsp. soy sauce
2 Tbsp. cornstarch
2 C. sliced celery
1 Large Can sliced mushrooms
1 Small green pepper (strips)
1 water chestnuts -- (8 oz.) sliced
1 Can Mandarin -- (16 oz.)
oranges -- drained (save)
In large frypan heat oil; brown meat and drain.
Sprinkle salt and ginger over meat; add onion, 1 cup water and
soy sauce. Heat to boiling. Reduce heat, cover tightly and
cook slowly 1 1/2 hours or until meat is tender.
Blend remaining water and cornstarch; stir into meat. Cook, stirring
constantly, until mixture thickens. Stir in remaining
ingredients except for Mandarin oranges. Continue cooking 5 to 7
minutes for crunchy veggies or longer until veggies are cooked
to your liking. Fold in oranges. Serve with chow mein noodles
or rice. If making rice, use juice from Mandarin oranges for
added flavor. Makes approximately 6 servings.
