4 slices dry bread
1 lb. beef liver -- ground
1 large onion -- finely chopped
1 egg
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon nutmeg
1/2 teaspoon thyme
4 tablespoons bread crumbs
4 tablespoons flour
3/4 stick butter
Soak bread in water. Squeeze dry; crumble into bowl. Combine liver,
onion, egg, seasonings, crumbs and flour with bread; blend thoroughly.
Dip spoon into kettle of boiling salted water; spoon dumplings into
water. More bread crumbs may be added if mixture seems too soft. Cook
for 3 minutes; remove with slotted spoon. Brown butter, pour over
dumplings.
