6 lb Beef Brisket -- well trimmed
2 Onions -- sliced
1 clove Garlic -- minced
3/4 cup Brown Sugar
1/2 cup Vinegar
1 cup Ketchup
1 cup Water
1 Tbsp Salt
Pepper -- freshly ground
Place brisket in Dutch oven and brown on all sides. Add onions and garlic;
saute until well browned. Add remaining ingredients. Cook, covered, until
meat is tender, 2 1/2-3 hours.
Or, to prepare in a crockpot, brown brisket, onions, and garlic as above.
Transfer all into large crockpot, along with remaining ingredients. Cook on
low 10-12 hours or overnight or until meat is tender.

NOTES : Either way, we prepare this ahead of time so that we can chill it
and defat the gravy.
To me, the best way to make this brisket is with sweet onions. Locally,
they are the 1015s.
